Turkey Provencale
Yields: 4 serving(s) - Preparation Time: 45 minutes
Ingredients
- 1 tablespoon(s) olive oil
- 1 clove garlic; crushed
- 4 turkey breast fillets
- 1 onion; chopped
- 1 red pepper; sliced
- 1 237 gram can chopped tomatoes; (8.1oz)
- 2 tablespoon(s) tomato puree
- 6 black olives; halved
- Salt and freshly ground black pepper
- 2 tablespoon(s) freshly chopped parsley
Directions
- Heat the oil and fry the garlic, turkey breasts and onion for 4-5 minutes, stirring occasionally.
- Add the pepper, tomatoes, tomato puree, olives and seasoning and cook for a further 4-5 minutes.
- Transfer to a warmed serving plate and sprinkle with freshly chopped parsley.
- Notes: delicious quick and easy supper, ideal served with crusty bread.
