Strawberry Parfait (Low Fat)

Ingredients
- 2 cup(s) nonfat milk
- 1/4 cup(s) nonfat powdered milk
- 1/3 cup(s) granulated sugar
- 3 tablespoon(s) cornstarch
- 1/2 teaspoon(s) vanilla
Strawberry Coulis
- 2 cup(s) strawberries
- 2 tablespoon(s) confectioners sugar
- 24 strawberries; hulled and sliced, (about 3 cups)
Directions
- Bring milk, powdered milk, sugar and cornstarch to boiling in saucepan over low heat, stirring constantly, until thickened, 15 to 20 minutes; then boil 30 seconds.
- Remove from heat.
- Add vanilla.
- Strain into bowl.
- Place plastic wrap directly on surface of custard.
- Refrigerate until chilled and firm, about 30 minutes.
- Prepare coulis: puree strawberries and sugar in blender or food processor.
- In parfait glasses or custard cups, alternate layers of pudding, coulis and sliced berries.
- Chill.
