Greek Onion Soup
Yields: 4 serving(s)
Ingredients
- 2 tablespoon(s) olive oil
- 2 onions, chopped
- 2 garlic cloves, chopped
- 1 potato, chopped
- 1 teaspoon(s) salt
- 1 pinch ground black pepper
- A few bay leaves
- 1/2 teaspoon(s) marjoram
- 1 cup(s) yogurt
- 2 pint(s) stock
- 1 tablespoon(s) chopped parsley
Directions
- Heat oil in a pot & gently fry the onion for 2 minutes.
- Add garlic, potato & seasonings.
- Stir together.
- Add yogurt & mix well.
- Pour in stock.
- Bring to a boil, cover & simmer for 20 minutes.
- Garnish with chopped parsley.
- Jack santa maria, “greek vegetarian cookery”.
