Super Peanut Butter Pie

Lala johnson.
Whip cream cheese.
Beat in sugar, then peanut butter.
Slowly blend in milk.
Be eaten when frozen or when cream and cold, but will be too stiff if served at room temperature.
Just before serving drizzle chocolate syrup over top of pie in a decorative design and sprinkle with nuts.
This is good!

Super Chicken Sandwiches With Skinny Fries

Heat oven to 475 degrees.
Coat rimmed baking sheet with vegetable cooking spray.
Place potato wedges on pan cut sides down and coat with additional cooking spray.
Sprinkle lightly with garlic salt.
Bake 18 minutes.
Turn potatoes; coat with more cooking spray and sprinkle with additional garlic salt.
Bake 12 more minutes until potatoes are crisp and golden brown.
Meanwhile, coat 12-inch nonstick skillet with cooking spray.
Heat skillet over medium heat; add chicken and cook about 7 minutes on each side until juices run clear when chicken is pierced.
To make sauce: in bowl mix ketchup and mustard; set aside.
Remove chicken from skillet; cut each breast into 1/2-inch slices.
For each sandwich, spread 2 toast slices on one side with 1 tablespoon sauce each.
Sandwich 1 lettuce leaf, 2 tomato slices and 1 sliced chicken breast between toast slices.
Serve with potatoes and remaining sauce for dipping.
Menu: carrot sticks, grapes.
Nutritional information per serving: 420 calories; 5 grams fat; 45 mg cholesterol; 1210 mg sodium; 68 grams carbohydrate; 11 grams fiber; 27 grams protein.

Supreme Scalloped Corn

Heat corn and milk together, gradually stir in the egg.
Add the next 4 ingredients and a dash of pepper; mix well.
Pour into a greased 8 inch round casserole dish.
Sprinkle with buttered cracker crumbs.
Bake at 350 degrees for 20 minutes.

Super Super Dessert

Mix cake as directed on package and bake.
Cool.
Cover cake with drained pineapple.
Mix together softened cream cheese, instant pudding and milk.
Spread over pineapple.
Top with cool whip and nuts or coconut.

Combine and cook in black & decker handi-steamer until done, about 40 minutes.
My 13-year-old son loved this, and was happy to find out it was a mix and could therefore be duplicated.

Suppers Monday - Chicken With Mushroom Sau

Serve with spinach salad, mashed sweet potatoes, applesauce.
Pull skin off lets; separate at joint.
In plastic bag, combine flour, thyme and pepper.
Add chicken pieces, in batches if necessary; shake to coat well.
In skillet over medium-high heat, heat oil; brown chicken legs on all sides for 10 minutes.
Transfer to plate.
Reduce heat to medium; cook onion, stirring, for about 5 minutes or until softened.
Add mushrooms; cook, stirring, for about 10 minutes or until tender.
Stir in apple juice and balsamic vinegar, deglaze pan while bringing to boil.
Return chicken to pan; bring to boil.
Reduce heat; cover and simmer for 15 minutes.
Uncover and cook for about 5 minutes or until juices run clear when chicken is pierced.
Stir in salt ans sprinkle with parsley.

Supreme Sauce

Saute cnions, mushrooms in the white wine until the liquid is reduced dry.
While this is cooking add bouillon cubes to hot water to dissolve.
Add this to the cooked onions and mushrooms; add heavy cream and bring to a boil and reduce by 1/4.
Combine melted butter and flour to make a roux paste.
Add to boiling liquid and cook until mixture is thickened, approximately 1 minute.
If sauce is too thin, continue to cook until it has thickened.

Super Party Crab Dip

Mix first three ingredients.
Spread on platter, then “frost” with shrimp sauce.
Chill.
Serve.
It will be the biggest hit of any get-together.

Superauthentic Mexican Mole Sauce

Blend small amounts of the above in an electric blender to make a coarsepuree.
Heat 3 tablespoons of lard in a saucepan.
Cook the puree in the hot lard, stirring constantly.
Stir over low heat until the chocolate squares have melted.
Sauce should be quite thick.
Pour sauce over meat in a casserole dish, and cook covered over the lowest possible heat for thirty minutes.
Just before serving, sprinkle with 2 more tablespoons of sesame seeds.
Serves 8-10 with about 8 pounds of meat.

Super Cereal

Spoon the 1/2 cup of yogurt into the middle of the cereal bowl.
Peel the banana and break into small chunks.
Put the banana chunks around the spoonful of yogurt.
Sprinkle the 1/2 cup of cereal on top of the yogurt and banana.
Sprinkle the 1/2 cup of berries all over the cereal.

Super Sunday Lasagna

Prepare lasagna according to package directions, drain to medium bowl, combine ricotta, spinach, 1/2 cup mozzarella, parmessan and eggs; mix well in 15 x 9 inch baking dish.
Layer 2 cups sauce, half the lasagna, half the remaining sauce, all of the spinach mixture, half the remaining mozzarella, remaining lasagna, and sauce.
Cover.
Bake in a 350 degree oven until bubbly about 45 minutes.
Uncover.
Top with remaining mozzarella and parsley.
Bake 15 minutes.
Let stand 10 minutes before serving.
Refrigerate leftovers.

Put chocolate in zip-loc bag and allow to melt in the sun.
Add all remaining ingredients.
Close bag and mix well.
Chill until hardened.

Suppers Friday Pasta Carbonara With Peas

In bowl, whisk together eggs, egg white, parmesan, salt and pepper; set aside.
In large pot of boiling salted water, cook pasta for about 10 minutes or until tender but firm.
Drain, reserving 1/4 cup of the cooking liquid.
Meanwhile, in large nonstick skillet, cook pancetta over medium heat, stirring, for about 6 minutes or just until starting to brown.
Add garlic; cook, stirring, for about 2 minutes or until pancetta is crisp.
Stir in vinegar; bring just to boil.
Remove skillet from heat.
Add pasta; toss well.
Return skillet to stove.
Add remaining cooking liquid, egg mixture and peas; cook, tossing gently, for about 3 minutes or until egg mixture is thickened and pasta is well coated.
Sprinkle with parsley.

Super Nutritious Frittata

Peel sweet potato; cut into 1/2 inch chunks.
Place in steamer basket over boiling water; cover and cook for 5 minutes.
Add broccoli; cook, covered, for 4 minutes or until potato is tender and broccoli is tender-crisp.
Meanwhile, in bowl, whisk eggs, salt and pepper; set aside.
In 9 inch ovenproof skillet, heat oil over medium heat; cook onion, garlic and tarragon, stirring, for 2 minutes or until softened.
Arrange sweet potato mixture over skillet; pour egg mixture over top.
Reduce heat to medium-low; cover and cook for about 12 minutes or until bottom is golden and edge is set but centre still jiggles slightly.
Sprinkle cheese over top; broil for 2 to 3 minutes or until light golden and cheese is bubbly.

Super Easy Garlic Bread

Spray both sides of bread with pam.
Arrange on baking sheet.
Combine parsley, basil, salt and pepper.
Sprinkle on each slice of bread.
Gently spray bread again.
Bake at 350 degrees for 12 to 15 minutes or until golden.

Super Carrot Raisin Salad

In serving bowl, combine yogurt, honey lemon juice and cinnamon into a smooth dressing.
Add carrots, raisins and pineapple to dressing and stir gently, but thoroughly, until salad is uniform.
Cover and chill for a minimum of 15 minutes.
Toss again before serving and drain liquid, if desired.
Use a slotted spoon to serve calories: 93 fat:.
2 grams cholesterol.
3 mg sodium 29mg.

Super-Simple Apple Treat

Place toast on a cookie sheet or oven-proof plate.
Arrange sliced apple on toast, dot with butter/margarine, sprinkle brown sugar over and dust with cinnamon and/or numeg to taste.
Place some chese on top if you wish.
Put under broiler until bubbly and brown on the edges of the apple pieces.
And lest we forget, a baked apple is even simpler.
Core apples, slice knobs off of bottom to make a flat base.
Place on a greased baking dish, sprinkle the butter, sugar and spices down the centers, and bake in a 325 degree oven until soft and tender - the time depends on the apple variety.

Super Sundae Topping

Combine oats, sugar and butter, mixing until crumbly.
Place in a shallow baking pan.
Heat in preheated moderate oven 350 fahrenheit about 10 minutes, stirring occasionally.
Cool 15 minutes, then toss lightly with a fork to form crumbs.
Stir in peanuts.
Store in covered jar in refrigerator.
Stir with fork before using.
Serve as a topping on sundaes, puddings and other desserts.
