Pickled Pink Eggs
Empty beets and their liquid into a small saucepan.
Add onion, vinegar, water, sugar, salt, and pickling spice.
Heat just until the sugar dissolves.
Cool to room temperature.
Pour the beet mixture over the eggs.
Cover and marinate 2-3 days in the refrigerator before serving.
Stir occasionally.
To serve, spoon beets, eggs and some liquid into a serving bowl and top with a dollop of sour cream.
Pie Dough
Combine flour and salt; meal in shortening.
Add enough ice water to allow flour to hold together.
Makes two pie shells 1 pie.
Pickled Squab Pigeon With Walnut Oil
Cut down either side of the breast bones of the pigeons and remove the breasts.
Make a lengthways incision under the fillets of the breasts to make a pocket.
Tuck inside a fresh bayleaf and a sprig of thyme.
Remove skin from breasts.
Heat chicken stock in a frying pan, add the pigeon breasts and poach gently for 2-3 minutes each side until cooked, but still quite pink in the middle.
Remove pigeons from stock.
Prepare marinade: finely chop celery and spring onions.
Peel carrot and dice with courgette.
Cut peppers in half and discard cores.
Chop flesh.
Fry vegetables in a pan with a little walnut oil - keep them crisp and the colours bright.
Remove vegetables to a plate.
Add sherry and vinegar to pan and reduce to take out acidity.
Add reduced stock, remaining walnut oil, walnuts and seasoning and whisk until blended.
Pour marinade into a deep container.
Add vegetables and then submerge squab in marinade, cool and refrigerate overnight.
Serve thinly sliced with a little of the vegetables and marinade poured round.
Garnish with salad leaves.
Picnic Pie With Cheese And Ham
In a large bowl, mixed the inch-sized diced ham, and add the cottage cheese, ricotta cheese, parmesan cheese, beaten egg yolks, italian spices, salt and pepper and stir.
Add toasted bread crumbs, parsley, and onion and mix well.
In a 9″ springform pan, place sufficient pie crust to coat the inside of the pan.
Put the filling into this pie crust and then top with a second crust.
Tuck the edges of the pie crust into the inside of the spring form pan and decorate the top crust with dough cutouts of flowers, or pigs, or whatever.
Coat the outer crust with beaten egg yolk and bake.
Bake in a 375 fahrenheit oven for 1 hour.
Let cool to room temperature before removing from the springform pan.
Pico De Gallo 3
Place chopped tomatoes in a bowl.
Combine olive oil, garlic and chiles in a small pot over medium heat and cook, stirring, 3 minutes.
Add to tomatoes, and add the onion and lime juice.
Chill before serving.
Pickled Vegetables (Tsukemono)
This easy recipe can utilize almost any vegetable, such as daikon radish or broccoli stems.
Sprinkle turnips and cucumbers with salt and let stand for 5 minutes.
Place vegetables in a covered container.
Add remaining ingredients and allow to stand, refrigerated, for at least 12 hrs.
Vegan.
Picnic - Tartine From Provence
Cut the bread in half lengthways and rub the cut surfaces with garlic.
In a food processor, combine olives, red pepper, beans, tomatoes and anchovies.
Mix in the olive oil and lemon juice.
Adjust seasoning.
Spread the mixture thickly over the bread and put the sides back together again.
Tie up with string and enclose in aluminum foil or grease proof paper.
Place a board on top of the parcel with a few weights and press for 1 hour.
Then off you go to your picnic.
Picnic Lunch Bar
Grease the tin.
Set oven to 190o cups or moderately hot.
Mix together flour, baking powder and seasoning in a bowl.
Rub in the margarine till the mixture resembles fine breadcrumbs.
Finely chop meat and stir into the dry ingredients.
Also add parsley and half the grated cheese.
Add the milk and eggs and stir with a fork to get a soft dough.
Pat out the dough to fill the tin.
Mark out 12 slices with the back of a knife.
Sprinkle the reserved cheese over the top.
Bake above the centre of the oven for 45 to 50 minutes, covering with foil if it browns too quickly.
Turn out and cool on a wire rack.
Cut into slices along the markings.
Pickled Pink Egg Appetizers
* use about 2 tablespoons of the juice from pickled beets if desired; gives a pink color and adds a pleasant taste.
Simmer vinegar and spices uncovered for 10 minutes; cool slightly, add garlic and bay leaf.
Pack eggs into a screw top jar, add vinegar mixture; cover and cool to room temperature.
Refrigerate 7-10 days before serving, longer for stronger flavor.
Pickled Spring Garlic (Manuel Jang-Ajji)
Select young garlic heads with no sprouts.
Remove roots and stems, wash, and peel off the outside skin.
Place in bowl or jar and pour in the vinegar.
Allow to stand for 4 or 5 days,, turning the heads occasionally.
When the garlic has lost its harsh taste, drain off the vinegar.
Boil the soy sauce with the sugar for a few minutes, and let cool.
Pour the cooled soy sauce over the garlic, seal the jar and let it sit for at least 2 months.
To serve, slice across the heads.
Notes: 1.
Pickled garlic can be made only in early spring when soft, young heads are available.
It is very important to let the boiled soy sauce cool before combining with the garlic.
Cooling prevents the garlic from going bad.
Garlic prepared this way loses all of its characteristic strong odor.
Pickled Okra
Fresh okra dill seed hot red peppers hot green peppers garlic cloves.
Place 1/2 t dill seed in bottom of each sterilized quart jar.
Pack washed fresh okra as tightly as possible in each jar being careful not to bruise the okra.
Add 1/2 t dill seed, 1 hot green pepper, 1 hot red pepper and 1 clove of garlic to each jar.
Bring to boil the vinegar, water, and salt.
Cover okra with hot mixture.
Seal jars and allow to stand two weeks.
Serve icy cold.

Pie Crust Topping
Mix dry ingredients together, add apple juice to applesauce and blend into dry ingredients.
Add water if too dry.
Spoon over top of pie pan or 2 quart deep dish baking pan.
I cook a deep dish pie for about 30-40 minutes, waiting for the liquid below to start to bubble out.
Pico De Gallo 2
Combine all ingredients in bowl.
Season with salt and pepper.
Cover; chill at least 1 hour before serving.
Pickled Vegetables
Combnie water, vinegar, sugar & salt.
Stir until the sugar is dissolved.
Let the mixture cool to room temperature.
Add the vegetables to the liquid & let them marinate, covered, for 1 day at room temperature, or 2 to 3 days in the refrigerator.

Picnic Loaves
With a sharp serated knife, cut out a circle int he top of the bread and remove it.
With your fingers, remove as much of the bready interior as possible.
Save it to make bread crumbs spread 1 tablespoon pesto around the inside of a hollowed out bread.
Scatter a quarteer od the sun0dried tomatoes on the bottom, and 1/2 cup of the chickpeas over that.
Top with a quarter of the roasted peppers, amoked mussels and anchovies, 1 teaspoon of capers, a few tomato slices and a quarteer of the watercress leaves.
Repeat the layers, beginning with the pesto.
Place the bread cap on the filled bread and wrap in aluminum foil.
Hollow out, fill and wrap the second loaf.
Refrigerate for at least 1 hour or as long as 24 hours.
To serve, unwrap the loaves and cut into wedges.

Picnic - Mitton Of Pork
Line a 7-inch pudding basin with most of the bacon rasher, reserving a few for the top.
Put in a layer of pork, then stuffing, season with salt, pepper and mace.
Continue this layering process until the basin is full, finishing with the reserved bacon.
Press down well, then cover tightly.
Stand the basin in a baking pan to catch drips.
Bake in a 350 degree oven for 1 hour.
Place a weighted board over the pudding and leave until completely cold.
Turn out the mitton and slice to serve.
Pickled Spinach
Combine first 5 ingredients, tossing gently.
Chill at least 15 minutes.
Sprinkle bacon over top; serve on lettuce leaves, if desired.

Pickled Pickerel
“the complete book of pickles and relishes” by leonard louis levinson.
Cut fish into small fillets; cover with water.
Add onions, pepper, allspice, sugar and lemon.
Boil until fish is nearly done; then add vinegar to equal amount of liquid remaining.
Boil till done; add capers and seal in.
Pico De Gallo 1
Mix all ingredients in large bowl.
Season to taste with salt and pepper.
Can be prepared 3 hours ahead.
Cover and let stand at room temperature.
Pickled Nastutium Seeds
Method: cover nasturtium pods with salted water for three days, changing water daily.
Drain and dry them.
Put spiced vinegar ingredients in a saucepan.
Boil hard for 10 mins then allow to cool.
Put pods in a jar layered with a few tarragon leaves and plenty of horseradish.
Strain cold vinegar over seeds and cover.
Enough to last a lifetime i should think!
