Baked Acorn Squash With Pear And Apple
Preparation time: 15 minutes cooking time: 1 hour 10 minutes yield: 4 servings.
Oven to 325.
Butter a baking pan.
Place squash cut side down in the baking pan.
Add 1/4 inch hot water to the pan.
Bake for 45 minutes.
Meanwhile, mix in a medium bowl the “fruit”.
Heat butter in a large skillet over medium heat until melted.
Add the apple mixture and cook until the fruit is golden brown, about 5 minutes.
Stir in cider and bourbon.
Simmer, stirring often, until the fruit is tender, about 8 minutes.
Remove the squash from the oven; pour off the water from the pan and turn the squash cut side up.
Fill the squash with the apple mixture.
Bake until the squash is tender, about 15 minutes more.

By lois conway and linda rehberg aka “breakfast in a bread pan” for 1.5 pound loaf.
In a skillet, cook bacon until crisp.
Remove from pan, drain or pat with paper towels, and reserve the drippings, crumble the bacon.
Place all ingredients in bread pan, using the least amount of liquid listed in the recipe.
Select light crust setting and press start.
Observe the dough as it kneads.
After 5 to 10 minutes, if it appears dry and stiff or if your machine sounds as if it is straining to knead it, add more liquid 1 tablespoon at a time until dough forms a smooth, soft, pliable ball that is slightly tacky to the touch.
After the baking cycle ends, remove bread from pan, place on cake rack, and allow to cool 1 hour before slicing.
Crust: light bake cycle: standard.
Bagel Toppers
This is for 4 bagels, halved and toasted.
New yorker-combine cream cheese, salmon, sour cream, lemon juice, dill, salt and pepper.
Midwestern-combine cream cheese, ham, mustard and pepper.
Californian-combine ricotta, radishes, cucumbers, parsley, salt and lemon peel.
Pizza snack-heat oven to 450~.
In small bowl, combine tomato paste and oregano.
Spread each bagel half with 1t paste mixture.
Place on ungreased cookie sheet.
Top each with bell pepper; sprinkle with cheese.
Bake at 450~ for 6 to 8 minutes or until cheese is melted.
Bacon-Wrapped And Cheddar Stuffed Dogs
Preheat the broiler.
Pat the frankfurters dry.
In a skillet cook the bacon for 3 minutes or until still pliable and not crisp.
Transfer to paper towels to drain.
Cut a 1/2-inch slit lengthwise from end to end of each frankfurter.
Stuff each frankfurter with the cheese.
Wrap the entire length of each frankfurter with 2 slices of the bacon and secure with toothpicks.
Place the prepared frankfurters on a rack over a baking pan or on a broiler pan.
Broil the frankfurters until the bacon is crispy, about 2 to 3 minutes.
Serve frankfurters in rolls.

Combine the chiles, green onions, garlic, lime juice, parsley or cilantro, cloves or cinnamon and ground pepper.
Cut deep gashes in the chicken and fill with the mixture.
Secure open end with a toothpick to keep the stuffing from falling out.
Beat the egg and combine with the soy sauce and pepper sauce.
Lightly dust the chicken with flour, dip in the egg mixture and roll in the bread crumbs.
Heat the oil to 375 degrees and fry the chicken until golden brown, 3-4 minutes on each side.

Bacon Spoon Bread
Taken without permission from the complete book of breads.
Beforehand, fry the bacon.
Cut or chop into small bits.
Shred the cheese.
Preheat oven to 325 degrees.
Stir cornmeal into the cold water in the saucepan and place over medium heat.
Bring to a bubbling boil, stirring constantly.
When it is thick-perhaps 60 seconds-remove from heat.
Stir in the cheese, butter, garlic and salt.
When cheese is melted pour in the milk.
Stir in egg yolks and add bacon bits.
Beat egg whites stiff, and fold them into the batter.
Pour into the casserole or souffle dish one 2-quart casserole or souffle dish, greased.
Level the batter with rubber spatula.
Bake in the oven for about 1 hour.
The bread will be nicely browned, high and puffy.
Slip a knife blade into the center of the casserole.
If the blade comes out clean and dry, the spoon bread is done.
If not, return to the oven for an additional 10 minutes.
Remove bread from the oven.
Serve while hot.
Bacon, Dill, And Onion Potato Salad
Slice potatoes into 1/4-inch-thick slices; place in a large saucepan; add water to cover.
Bring to a boil; cover, reduce heat, and simmer 15 minutes.
Drain.
Combine potato, green onions, and next 3 ingredients in a bowl; toss gently.
Combine sour cream and remaining 5 ingredients in a small bowl; stir well.
Pour dressing over potato mixture; toss gently.
Cover and chill.
Baileys Chocolate Chip Cheesecake
For crust: preheat oven to 325f.
Coat 9″ diameter springform pan with nonstick vegetable oil spray.
Combine crumbs and sugar in pan.
Stir in butter.
Press mixture into bottom and 1″ up sides of pan.
Bake until light brown, about 7 minutes.
Maintain oven temperature at 325f.
For filling: using electric mixer, beat cream cheese until smooth.
Gradually mix in sugar.
Beat eggs in one at a time.
Blend in baileys and vanilla.
Sprinkle half of chocolate chips over crust.
Spoon in filling.
Sprinkle with remaining chocolate chips.
Bake cake until puffed, springy in center and golden brown, about 1 hour 20 minutes.
Cool cake completely.
For cream: beat cream, sugar, and coffee powder until peaks form.
Spread mixture over cooled cake.
Garnish cake with chocolate curls.
Baked Acorn Squash Rings
Wash the squash, then slice it crosswise into 1/4-inch rings.
Remove the seeds and pulp.
Layer the rings in a casserole dish, top with maple syrup, dust on cinnamon and sprinkle with water.
As an added touch, slices of apple can be placed in layers alternating with the squash rings.
Bake, covered, in a preheated oven at 275 degrees for about 30 minutes.
The timing and temperature are not critical, so this can bake along with other dinner dishes.

Bajan Black Beans And Rice
Used, i just happen to like better than bouillon especially.
Saute garlic, onion, and red, green, and habanero peppers in 1/2 cup of broth in large pot for 10 minutes.
Add remaining broth, tomatoes, and rice and simmer covered for 15 minutes.
Add zucchini and simmer for an additional 30 minutes.
Stir occasionally to keep from sticking.
Add black beans, corn, and cilantro and cook an additional 5 minutes to heat through.
Freezes well.

Bahama Bread
Each very ripe bananas; mashed preheat oven to 350 combine flour, baking soda, and salt in a bowl cream the butter in a mixing bowl gradually add the sugar and mix to well blended add the eggs and the banana mix untill well blended.
Combine the milk and lemon juice in a large bowl.
Alternately mix the flour mixture into the banana mixture.
Add a little at a time, beginning and ending with the dry ingredients.
Blend well after each addition.
Add nuts.
Turn the batter into a heavily buttered 9 x 5 x 3 inch loaf pan.
Bake for one hour or until bread is golden and springs back when touched.
Cool in pan for ten minutes.
Take bread out of pan and cool completely.
Bagel Thins, Lo Cal, Lo Salt
Using a very sharp serrated knife, slice bagel into very thin rounds.
Arrange in single layer on baking sheet; brush with margarine.
Sprinkle with oregano.
Bake in 350f oven for 12 minutes.
Let cool and store in airtight container for up to 1 week.
Per 1 piece serving: 14 cal;.

Bacon, Courgette And Red Pepper Frittata
Heat the oil in a large frying pan and cook the bacon for 5-6 minutes, until golden brown, stirring occasionally.
Add the courgettes, pepper and salad onions and cook for a further 3-4 minutes.
Break the eggs into a jug and beat together with the parsley and seasoning.
Pour the egg mixture into the pan and cook over a medium heat for 5-6 minutes until the underside is golden.
Place the pan under a preheated hot grill for a further 3-4 minutes until the frittata has set and the top is golden.
Transfer to a warmed plate and serve immediately with a crisp green salad.
Notes: a delicious supper dish, based on a traditional omelette.
Can be served hot or cold with a mixed leafy salad and crusty bread.
Bacon Sour Cream Dressing
Blend salad dressing into sour cream.
Stir in buttermilk.
Combine vinegar and worcestershire sauce.
Gradually add to salad dressing mixture, stirring carefully.
Add onions, dehydrated garlic, salt, pepper and sugar; blend well.
Cover.
Refrigerate until ready to serve.
Cook bacon until crisp.
Drain.
Just before serving, stir in bacon.

Bacon-Topped Chicken Breasts
Debone chicken breasts.
Cut chipped beef into strips and layer evenly in 12 x 8-inch glass baking dish.
Place chicken breasts with beef and bacon to cover.
Cover with paper towel.
Microwave on high 14 to 16 minutes until chicken is about done.
Remove partially cooked bacon strips to paper towel and cover paper towel.
Microwave on high 1 1/2 to 3 minutes or until crisp.
Set aside.
Drain juices from chicken.
Combine soup, sour cream and chives.
Spoon onto each chicken breast.
Cook uncovered on high 5 to 6 minutes or until heated well.
Crumble bacon and sprinkle over chicken.
Bagel Snack Chips
Refrigerate bagels at least 1 hour for easier slicing.
Preheat oven to 325 degrees.
To slice bagel, place bagel flat on cutting board.
With a serrated knife, cut bagel in half vertically.
Place halves on cutting board, cut side down.
Cut halves into thin slices, about 1/4 inch thick.
Repeat with remaining bagels.
Place slices on ungreased baking sheets.
In a small bowl, blend butter with garlic or onion salt.
Spread over tops of slices and bake 15-20 minutes or until lightly browned.
Cool on a wire rack.
Store in airtight container.

Place bacon in a 3 quart Casserole; cover and microwave at high 6 to 9 minutes or until done.
Remove bacon with a slotted spoon, reserving drippings in casserole; set bacon aside.
Add vegetables to drippings; microwave at high 6 to 8 minutes or until tender.
Blend in lfour, salt, and pepper; stir well.
Gradually stir in half-and-half, milk, and chicken broth.
Cover and microwave at high 7 to 11 minutes or until thickened and bubbly, stirring at 2 minute intervals.
Add cheese, stirring until melted.
Cover and microwave at medium 2 minutes.
Top each serving with bacon.
